This indulgent ice cream dessert is very easy to assemble and celebrates the nation's favourite festive chocolate-After eight!

Ingredients

1. Step 1Let both ice creams soften slightly at room temperature. Meanwhile, line a 20.5cm round tin with a single, large sheet of baking parchment, smoothing it out as best you can. Melt the chocolate in a heatproof bowl set over a pan of barely simmering water. Set aside to cool until needed.
2. Step 2In a separate large bowl, mix the clotted cream ice cream and After Eight’s until combined. Scrape 1/3 of this mixture into the lined tin and smooth to level.
3. Step 3Top with 1/3 of the mint chocolate chip ice cream, smoothing to level. Sprinkle over 1/3 of the meringue nests, then drizzle over 1/3 of the melted chocolate. Repeat layering twice more, finishing with the chocolate drizzle. Freeze until solid, about 6hr.
4. Step 4To serve, transfer to a board. Allow to soften slightly at room temperature before serving in slices.
