A delicious variation on our All-You-Can-Eat Soup Diet Basic Recipe. Try these others: Mexican Chicken Soup, Minestrone Soup, Greek Fish Stew, Southwest Chili, Thai Shrimp Soup, Goulash, and Red Beans and Rice Soup.

Ingredients

  • 2 cups All-You-Can-Eat Soup Diet Basic Recipe
  • 1/2 cup coarsely chopped cauliflower
  • cup water
  • 1/2 cup drained and rinsed canned chickpeas
  • 1/4 cup frozen peas
  • 1/4 tsp. curry powder
  • 1/2 tsp. grated, peeled fresh ginger
  • 2 Tbsp. plain lowfat yogurt

Directions

    1. Step 1Prepare All-You-Can-Eat Soup Diet Basic Recipe.
    2. Step 2In saucepan, combine cauliflower and water; cover and cook until cauliflower is tender (do not drain). Stir in Basic Soup, chickpeas, peas, curry powder, and ginger; heat to boiling. Reduce heat; cover and simmer 4 minutes to blend flavors. Top with yogurt to serve.
