Upgrade salmon — ever the dinner staple — with matzo breadcrumbs and maple syrup, hot sauce and brown-sugar glazed radicchio.

Ingredients

  • 3 Tbsp. brown sugar
  • 3 Tbsp. Hot sauce
  • 3 Tbsp. maple syrup
  • 3 Tbsp. olive oil
  • 4 salmon fillets (5 oz. each)
  • 2 medium heads radicchio, cut into 8 wedges
  • 1 sheet matzo, broken up
  • 3 Tbsp. Chopped parsley
  • 1/4 cup golden raisins
  • 1/4 cup walnuts, chopped

Directions

    1. Step 1Whisk brown sugar, hot sauce, maple syrup and olive oil until smooth. Arrange salmon fillets and radicchio on large rimmed baking sheet lined with foil; brush all over with maple syrup mixture. Sprinkle 1/2 teaspoon salt on salmon and radicchio.
    2. Step 2In food processor, pulse matzo until finely crushed; pulse in chopped parsley and 1 tablespoon olive oil. Pat crumbs onto salmon to make them adhere. Bake at 450°F 12 to 15 minutes or until salmon is cooked through. Top radicchio with golden raisins and walnuts.
