Ingredients

  • 2 tsp.

    olive oil

  • 2 1/2 lb.

    chicken thighs

  • 3/4 tsp.

    salt

  • 2

    medium shallots, chopped

  • 2/3 cup

    white wine

  • 1/4 tsp.

    dried rosemary

  • 3 Tbsp.

    low-fat sour cream

  • 1/2 cup

    chicken broth

  • snipped chives

Directions

    1. Step 1In 12-inch skillet, heat olive oil on medium to high heat.
    2. Step 2Season chicken thighs with 1/2 teaspoon salt.
    3. Step 3Cook, skin sides down, 6 to 8 minutes or until browned; transfer to foil-lined baking sheet, skin sides up.
    4. Step 4Bake in 450 degree F oven 15 minutes or until cooked through (165°F).
    5. Step 5To same skillet on medium, add shallots. Cook 2 minutes.
    6. Step 6Add white wine, dried rosemary and 1/4 teaspoon salt. Simmer 2 minutes, scraping up browned bits.
    7. Step 7Whisk in sour cream and chicken broth.
    8. Step 8Serve chicken with sauce; garnish with chives.
