Ingredients

  • 1 3/4 cups

    all-purpose flour

  • 1 1/2 tsp.

    baking powder

  • 1 tsp.

    baking soda

  • 1/2 tsp.

    salt

  • 2 cups

    low-fat buttermilk

  • 2

    large eggs

  • 3 Tbsp.

    sugar

  • 3 Tbsp.

    vegetable oil

  • 1 Tbsp.

    vanilla extract

Directions

    1. Step 1Preheat waffle maker. In a large bowl, whisk flour, baking powder, baking soda, and salt. In a medium bowl, whisk buttermilk, eggs, sugar, oil, and vanilla. Add buttermilk mixture to flour mixture. Stir until just combined (small lumps are OK).
    2. Step 2Spray waffle maker with nonstick cooking spray. Add 1/2 cup batter to waffle maker. Close the waffle maker and cook 2 to 5 minutes or until golden brown and crisp. Keep warm by placing directly on oven rack in a 225 degree F oven. Repeat with remaining batter. Cooked waffles may be cooled, wrapped tightly in plastic and frozen for up to 1 month. Reheat in toaster oven or a 350 degree F oven for 8 to 10 minutes (directly on oven rack) until hot and crisp.

About 225 cals, 7 g protein, 30 g carbs, 8 g fat (1 g sat), 1 g fiber, 490 mg sodium.
