This spicy, Asian-inspired salad with tuna, arugula, cucumber, and brown rice works as both a main course and a gourmet side salad.

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 fresh tuna steak
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup light mayonnaise
  • 1 Tbsp. Asian hot chili sauce
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. toasted sesame oil
  • 1 pinch sugar
  • 6 cups arugula
  • 2 cups cooked brown rice
  • 1 seedless (English) cucumber
  • 1 avocado

Directions

    1. Step 1If using fresh tuna, in 10-inch skillet, heat vegetable oil on medium-high until very hot. Sprinkle tuna all over with salt and pepper. Add tuna to skillet; cook 3 minutes per side or until browned on both sides. Transfer cooked tuna to cutting board. Thinly slice.
    2. Step 2In large bowl, whisk together mayonnaise, chili sauce, lime juice, soy sauce, sesame oil, and sugar. Add arugula, rice, cucumber, and avocado; toss to combine. Divide salad among 4 serving plates. Top with tuna.
